Preheat oven to 350ºF. Grease and lightly flour a 9” square cake pan.
In a medium bowl, soft together the flour, baking powder, baking soda, cinnamon, and sugar.
In a large bowl combine the egg and the apples. Stir in ½ cup maple syrup, raisins, orange zest, vanilla, applesauce and oil. Add the dry ingredients, stirring until just combined. Spread batter into prepared pan and bake for 40-45 minutes or until a toothpick inserted in center comes out clean. Brush the warm cake with maple syrup.
In a small bowl mix together the sour cream and the ½ cup maple syrup. In a bowl beat the heavy cream until stiff. Fold the sour cream mixture into the whipped cream. Serve with the warm or cooled cake.
