Maple Apple Cake

Directions:

Preheat oven to 350F. Grease and lightly flour a 9 square cake pan.

In a medium bowl, soft together the flour, baking powder, baking soda, cinnamon, and sugar.

In a large bowl combine the egg and the apples. Stir in cup maple syrup, raisins, orange zest, vanilla, applesauce and oil. Add the dry ingredients, stirring until just combined. Spread batter into prepared pan and bake for 40-45 minutes or until a toothpick inserted in center comes out clean. Brush the warm cake with maple syrup.

In a small bowl mix together the sour cream and the cup maple syrup. In a bowl beat the heavy cream until stiff. Fold the sour cream mixture into the whipped cream. Serve with the warm or cooled cake.
