Fudge Cake

Directions:

Preheat oven to 350F. Grease and lightly flour a 9 tube pan.

In a large bowl, mix together cup cocoa, the boiling water and the butter, stirring well to dissolve the cocoa. Let the mixture cool.

Sift together the flour, sugar, baking powder, and salt in a small bowl. Slowly beat in the flour mixture to the cocoa mixture with an electric mixer on low. Increasing the speed of the mixer to medium, add the eggs, one at a time, beating well after each addition. Add the sour cream, and the vanilla. Pour the batter into prepared pan and bake for 35-40 minutes, or until a tester inserted in center of cake comes out clean.

Cool the cake on a wire rack completely before frosting.

Frosting: In a medium bowl beat together the cream cheese, confectioners sugar, coca, vanilla and sour cream. Blending well until smooth. Spread the frosting over the cooled cake.
