Easy Peach Cobbler

Directions:

Preheat oven to 375F.

Cut an X in bottom of wach peach and blanch the peaches in a large pot of boiling water for 10-15 seconds. Transfer peaches with a slotted spoon to a bowl of cold water. Peel off skin with a paring knife, and discard. Halve peaches, pit and cut into 14 slices.

Place sliced peaches into a 3 quart saucepan and add lemon juice and 2/3 cup sugar. Bring to a boil over high heat, stirring constantly. Cook for 4 minutes stirring occasionally. Remove from heat.

Pour melted butter into a 13x9 baking or casserole dish.

Whisk together flour, baking powder, salt and 1 cup sugar in a medium bowl. Whisk in milk just until combined. Pour batter over butter in baking dish (do not stir). Pour peaches over batter (do not stir). Sprinkle lightly with cinnamon and bake until cobbler is bubbling and top is golden brown, 40-45 minutes. Cool in pan until warm, about 20 minutes.

Serve if desired with whipped topping.
