Old Fashioned Coconut Cake



2-1/2 Cup Sifted Flour

1-1/2 Tsp Baking Powder

1/4 Tsp Salt

1/2 Cup Butter

1-1/3 Cup Sugar

3 Eggs

1/2 Cup Flaked Coconut

1-1/2 Cup Buttermilk

1-1/2 Tsp Vanilla



2 Egg Whiltes

1/2 Cup Pina Colada Mix

1-1/2 Cup Flaked Coconut

4 Tbsp Confectioners Sugar



1-1/2 Cup Sugar

1/4 Cup Water

2 Egg Whites

2 Tbsp Light Corn Syrup

1 Tsp Vanilla

1/2 Tsp Salt

Flaked Coconut


 Preheat oven to 375 degrees F. Grease and Flour two 9 inch round cake pans.

Sift together the flour, baking powder, baking soda and salt. Set aside.

Cream the butter and sugar. Add the eggs, one at a time, beating well after each addition. Combine the 1/2 cup coconut and the buttermilk. Add alternately with the flour mixture to butter mixture. Add vanilla. Pour batter into prepared pans and bake for 25-30 minutes or until a tester inserted in center comes out clean. Cool in pans for 5 minutes before removing to wire racks to finish cooling.

Filling: Beat the egg whites until stiff. Add the pina colada mix, flaked coconut and confectioners sugar and mix gently with a spoon. Spread between the cake layers. Frost the cake and sprinkle with flaked coconut.

Frosting: Combine ingredients in top of double boiler. Beat wel. Place over simmering water. Cook, beating constantly at high speed with an electric beater for about 7 minutes or until triple in volume and holds stiff peaks. Remove from heat and ice cake
