Cranberry Orange Fruit Cakes
2 pkgs Cranberry Orange Muffin Mix
3 oz cream cheese
1 cup mixed candied fruit
1/4 cup orange juice
1 tsp vanilla
3 Tbsp instant vanilla pudding mix
1 Tbsp orange peel, grated
6 oz chopped walnuts
Preheat oven to 350°, grease three 5x3" loaf pans or 12 muffin cups.
Combine eggs, cream cheese, candied fruit, orange juice and vanilla. Set aside.
In separate bowl, combine muffin mixes and pudding mix. Add cream cheese mixture and blend well. Fold in nuts. Bake small loaf pan, 35–40 minutes or muffins for 20–25 minutes.
