Cranberry Cake

Cranberries

Walnuts Or Pecans, Coarsely Chopped

Directions:

Preheat oven to 325. Grease a 9 fluted 9 tube pan.

In a medium bowl, sift the flour, salt, baking powder, baking soda and 1 cup sugar.

In a large bowl with an electric mixer beat the eggs, buttermilk, and oil. Add the Flour mixture and beat until they form a smooth batter. Stir in cranberries, raisins, nuts, and orange peel.

Pour the batter into the prepared pan and bake for 1 to 1-1/4 hours or until a cake tester inserted in center comes out clean. Turn the cake out onto a wire rack placed over foil.

In a small saucepan, heat 1 cup sugar with the orange juice until the sugar dissolves, pour the mixture over the hot cake. Let the cake sit several hours or overnight before serving if desired with whipped topping.
