Cover Me Lemon Cake



1/2 Cup Butter

1 Cup Sugar

3 Eggs

1/2 Cup Milk

1/2 Tsp Vanilla Or Lemon Extract

2 Cups Flour

3 Tsp Baking Powder

1/2 Tsp Salt



4 Tbsp Butter

3/4 Cup Sugar

1/8 Tsp Salt

2-1/2 Tsp Grated Lemon Rind

1/2 Cup Lemon Juice

3 Eggs, Well Beaten


Preheat oven to 350 degrees F. Grease and flour a 9x13 baking pan.

 Cream the butter and sugar until light and fluffy; add eggs, one at a time. Slowly mix in milk and vanilla or lemon extract.

Sift the flour, baking powder and salt. Add gradually to butter mixture, beating well after each addition. Pour into prepared pan. Bake for 30-35 minutes or until a tester comes out clean.

Topping: Melt butter in top of a double boiler. Stir in sugar and salt. Add lemon juice and rind. Stir in beaten eggs slowly. Cook over moderate heat, stirring constantly until thick. Cool before spreading over top of cake.
