Chocolate Stout Cake

 

Ingredients:

Stout Such As Guinness

Raisins, Packed

Dark Brown Sugar, Firmly Packed

Directions:

Preheat oven to 350. Generously grease a bundt pan or tube pan, chill for 2 minutes, re-grease pan and chill while making batter.

Pour beer into measuring cup slowly, do not measure foam. Bring beer to a boil in a small saucepan and add raisins. Remove from heat and set aside.

Melt chocolate and butter together in a small saucepan over low heat, stirring constantly.

Sift together flour, baking soda and salt into a medium bowl.

Beat together eggs, brown sugar, and vanilla in a large bowl, with an electric mixer on high, until thick, about 2 minutes. Add chocolate mixture and beat until just combined. Reduce speed to low and add flour mixture. Stir in raisin mixture.

Pour mixture into prepared pan and bake for 40-45 min or until a tester inserted in center comes out clean. Cool cake in pan for 10 minutes before onverting on wire rack to finish cooling, at least 30 minutes before serving.
