Brandy Cake

Directions:

Preheat oven to 350F. Grease and lightly flour a 8 springform pan.

In a large bowl. Beat the eggs and the sugar with an electric mixer until light and fluffy.. Beat in the mace and the lemon peel. Stir in alternately the bread crumbs and the brandy. Beat in the almonds. Turn the batter into the prepared pan. Bake for 30-35 minutes, or until the cake shrinks back from the sides of the pan. Remove the sides of the pan and cool the cake on a wire rack. When cool, remove the bottom of the cake. Ice the cake with the lemon glace.

Lemon Glace: Stir the confectioners sugar and the lemon juice together until the sugar dissolves completely and the icing is smooth. The icing should be thick enough to coat the back of a spoon. If icing is too thick add more lemon juice; if too thin add more confectioners sugar.
