Black Bottom Cupcakes

Directions:

Preheat oven to 350F. Grease or paper line 18 muffin cups.

Using an electric mixer on medium speed, beat the cream cheese in a medium bowl until smooth. Add the egg, and 1/3 cup of sugar. Beat the mixture until well blended, stir in the chocolate chips. Set aside.

Sift together in a medium bowl the flour, 1 cup sugar, cocoa, and salt.

Combine the water, oil, vinegar, and vanilla in a small bowl, mixing well. Add the oil mixture to the flour mixture. Beat until well blended. Spoon the batter into the prepared muffin cups, filling about 1/3 fill. Place a large teaspoonful of the cheese mixture on top of the batter in each cup.

Combine 2 tablespoons of sugar and the walnuts in a small bowl; mix well. Sprinkle each cupcake with the sugar walnut mixture.

Bake for 35 minutes or until a tester inserted in center comes out clean.
