Apple Cranberry Cake

 

Ingredients:

Apples, Peeled, Cored And Coarsely Shredded

Dried Cranberries

Walnuts, Finely Chopped

Directions:

Preheat oven to 350F. Grease and lightly flour a 9 springform pan.

Beat the butter with the sugar until creamy with an electric mixer; add the eggs and beat for 5 minutes more. Add the flour, cinnamon and baking soda, and beat for 3 more minutes. Fold in the apples, cranberries and nuts. Place in prepared pan and bake for 1-1/2 hour, until a tester inserted in center comes out clean. Let stand in pan for 5 minutes before removing the sides to cool completely.
