Carrots, finely grated

Can crushed pineapple, drained

Walnuts, chopped

Can flaked coconut

Butter

Pkg cream cheese

Tsp

Vanilla

Confectioners sugar, sifted if lumpy

Directions:

Sift together flour, baking powder, baking soda, salt and cinnamon. Add sugar, oil, and eggs, mix well. Add carrots, pineapple, nuts and coconut, blend thoroughly.

Pour nto 3 9 round layer cake pans that have been greased and floured.

Bake in a 350 oven for 35-40 min or until done. Remove from oven, coo, a few minutes in pans. Turn out on wire racks and cool thoroughly.

Combine cup butter, cream cheese, 1 tsp vanilla, and mix well. Gradually add the confectioners sugar, beating well. If mixture is too thick to spread, add a small amou t of milk.Fill layers and frost top and sides of cake with Frosting
