Sweet Potato Crescent Rolls

Can sweet potatoes, drained, pureed

Milk

Butter, sliced and divided

Directions:

In a large bowl, combine flour, sugar, yeast and salt; stir until well blended. Using a bastry blender or 2 knives, cut in shortening until mixture resembles coarse meal. Add pureed sweet potatoes, milk, egg, and vanilla; stir until a soft dough forms. Turn dough onto a lightly floured surface and knead 2-3 min or until smooth. Shape into a ball and place in a greased bowl; turning to coat all sides. Cover and let rise in a warm place until doubled in bulk about 1 hour.

Preheat oven to 350.

Divide dough in half and shape into 2 balls. On a lightly floured surface, use a floured rolling pin to roll out 1 ball of dough into an 8x10 rectangle. Dot with of the butter slices. Fold in half from top to bottom and again from let to right. Re-roll out again to a 8x10 rectangle. Cut into a half and then into 16 triangles. Beginning at wide end, roll up each triangle and place on an ungreased baking sheet with point side down. Repeat with remaining dough. Bake 8-10 min or until golden brown.
