Ultimate Muffins



Liquid Ingredients:

3 eggs

1 cup buttermilk

3/4 cup of liquid Strong coffee, cooled

3/4 cup vegetable oil

2 tbsp fresh orange rinds


Dry ingredients:

3 cup all-purpose flour

4 tbsp cocoa powder

3/4 cup packed dark brown sugar

1 tsp baking powder

1/2 tsp soda powder

1 pinch of salt

1 tsp cinnamon

1 cup finely chopped hazelnuts

1/4 cup chopped dry apricots

3/4 cup semi-sweet chocolate chips


Preheat the oven to 375 F. Spray 12 medium size muffin cups with a non-stick cooking spray

In one large bowl, combine all liquid ingredients and whisk until well blended.

In another large bowl, mix all dry ingredients and make sure that nuts, chocolate chips and apricots are evenly distributed. Fold in the liquid ingredients in the dry ingredients and mix gently, just to combine. Do not over-mix. The batter has to remain lumpy. Fill the muffin cups to two thirds with an ice cream scoop. Place in the center of the oven and cook for 20 to 25 minutes. Let cool for 5 to 10 minutes on a rack before removing
