Pear Eggnog Muffins

Ingredients:

All-purpose flour

Firmly packed brown sugar

Baking powder

Medium pears, peeled, cored, and chopped

Cup

Eggnog

1/3

cup

Butter melted

Tablespoon

Butter, melted

Cup

Dark rum

Egg, lightly beaten

Directions:

Combine flour, sugar, baking powder, salt and nutmeg in a large bowl, make a well in center of dry ingredients. Combine chopped pears, eggnog, butter, rum and egg, stirring until well blended. Add eggnog mixture to dry ingredients, stirring just until moistened.

Spoon batter into greased muffin pans, filling 2/3 full. Bake 400 for 15 minutes or until wooden pick inserted in center comes out clean.
