Cranberry Fruit-Nut Bread

Ingredients:

Unsalted butter, softened

Fresh cranberries

Medium tart cooking apple

Walnuts

Egg, lightly beaten

Finely grated orange peel

Cup

Orange juice

Directions:

Preheat oven to 350. Butter and lightly flour the sides and bottom of a 9x5 tube pan.

Peel, core and cut the apple into small pieces. Place the cranberries, apples, and the walnuts thru the coarsest blade of a food grinder. Place into a bowl and set aside.

Combine the flour, sugar, baking powder, baking soda, and salt in a large bowl. Using a pastry knife cut the butter into the flour mixture until it resembles coarse meal. Stir in the egg, orange peel and the orange juice and mix well. Add the cranberry mixture and continue to stir until well mixed.

Spoon the mixture into the prepared pan, spreading and smoothing it out.

Bake in center of oven for 1-1/2 hour or until a pick inserted in center comes out clean.

Dust with Confectioners sugar if desired.
