Cinnamon Fruit Bread

Ingredients:

Mashed bananas (2 very ripe bananas)

Egg mixed with 1 tablespoon milk for glaze

Directions:

Pour the milk into a small saucepan and heat to lukewarm. Measure cup into a large bowl. Stir in sugar and yeast until dissolved. Let stand until foamy, 5-10 min. Stir in remaining milk, bananas, butter, orange peel, cinnamon and salt. Using a wooden spoon, sit in 1 cup of the flour at a time until a stiff dough forms for kneading (dough will be sticky).

Turn out dough on a lightly floured surface and knead until smooth and elastic, about 10-15 min, adding more flour as needed.

Transfer dough to a large oiled boel, turning to coat. Cover and let dough rise ina warm, draft free area, until doubled in bul, about 1-1/2 hours.

Grease 2 9x5x3 loaf pans. Punch sown dough and knead lightly. Divide dough in 2 and place in pans. Cover and let rise until doubled in bulk about 35 min.

Preheat oven to 375. Brush with the egg glaze and bake for 40-45 min or until a golden crust is formed.

Invert the loaves immediately onto a wire rack, turn right side up and cool completely.
