Cranberry Orange Muffins

 

Ingredients:

All purpose flour

Sugar

Sweetened dried cranberries

Coconut milk

Cup

Butter, melted

Grated lemon rind

Tsp

Vanilla

Large egg, lightly beaten

Directions:

Preheat oven to 400. Place 12 muffin cup liners in muffin cups.

Whisk together flour, sugar, baking powder and salt in a large bowl. Stir in cranberries, make a well in center of mixture.

Combine coconut milk, butter, lemon rind and vanilla in a small bowl, stirring well with a whisk. Add to flour mixture, stirring until just moistened. Spoon batter into lined cups. Sprinkle evenly with sugar. Bake for 20 minutes or until muffins spring back when touched lightly in center. Remove muffins from pans immediately, place on a wire rack.
