Blueberry Buckle

Fresh Or Frozen Blueberries

Ground Cinnamon

Butter

Directions:

Preheat oven to 350. Grease a 9x9x2 or a 8x8x2 baking pan.

In a medium bowl combine 2 cups flour, baking powder and salt; set aside.

In a large bowl with an electric mixer, beat the shortening on medium speed for 30 seconds. Add cup sugar. Beat on high speed until light and fluff. Add the egg and beat well. Alternately add the flour mixture and milk to beaten egg mixture; beating smooth after each addition.

Spoon batter into prepared pan. Sprinkle with blueberries. In another bowl combine the cup flour, cup sugar, and cinnamon. Using a pastry blender or 2 knives; cut in the butter until mixture resembles coarse meal; sprinkle over blueberries. Bake for 50-60 minutes, or until golden brown and a tester comes out clean from center.

**Note; Raspberries can be substituted for blueberries.
