Hot Cappuccino Eggnog
3 Eggs, Slightly Beaten
1/3 Cup Sugar
2-1/2 Cups Milk
1 Tsp Vanilla
1/2 Cup Coffee Liqueur or Rum
1 Cup Hot Espresso Or Any Other Strongly Brewed Coffee
1 Cup Heavy Whipping Cream
1 Tbsp Packed Brown Sugar
Mix eggs, sugar, and salt in heavy 2 quart saucepan. Gradually stir in milk. Cook over low heat 15-20 minutes, stirring constantly; just until mixture coats a metal spoon; remove from heat. Stir in vanilla, coffee liqueur or rum, and coffee.
Just before serving, beat whipping cream and brown sugar in small bowl with an electric mixer on high until stiff. Gently stir 1 cup of the whipped cream into eggnog mixture.
Pour eggnog into 6 handled glasses. Drop remaining whipped cream as a dollop into each glass. Sprinkle nutmeg on whipped cream mounds. Serve immediately.
