Chicken Fried Steak

Directions:

Sprinkle steak with 1 teaspoon pepper and pound with a mallet on both sides until 1/8” to 1/4” thick. Cut steak into serving size pieces.

On waxed paper, mix flour, 2 teaspoons salt, and ½ teaspoon pepper. Reserve 3 tablespoon of flour mixture for gravy. In a pie plate, beat eggs.

In a 12” skillet, heat the oil or shortening over medium high heat until hot.

Meanwhile, dredge steak pieces in eggs and then in flour mixture to coat thoroughly.

Cook steaks, in batches, until browned, about 2 minutes per side. Transfer steaks to a baking sheet lined with paper towels to drain, season with salt and pepper to taste.

Discard all but Ό cup of pan drippings in skillet, leaving any browned bits in skillet. Reduce heat to medium and stir in reserved flour mixture. Cook, stirring until flour is golden brown, about 1 minute. Whisk in milk and water and heat to boiling. Reduce heat and simmer until gravy reaches desired thickness, whisking salt and pepper to taste.

Serve steaks and gravy immediately.
