Busy Mom Roast Beef



3-4 Lb Roast Beef, Boneless Or Bone In

2 Cans Mushroom Soup

1 Envelope Lipton Beef Onion Soup Mix

1/2 Lb Pkg Mini Carrots (These Are Already Cleaned And Cooking Ready)

6-8 Potatoes, Peeled And Quartered

2 Large Onions, Peeled And Sliced

2-3 Stalks Celery, Chopped

3 tablespoon Corn Starch

2 Tablespoon Water


 In a medium bowl, mix together the Mushroom soup and Beef onion Sop mix. Place the Roast in a Crock Pot, cover with the Mushroom soup mixture, surround roast with carrots, onions, potatoes, and  celery. Cover and cook for 8 hours on low heat.


Remove meat and vegetables, place on platter.

mix the corn starch with the water, mix into broth, stir for 1 minute to

thicken and make gravy.


**Can also be cooked in a roasting pan in oven, covered tightly with lid or foil and cook for 3 hours in a 400 Degree F Oven.
