Busy Mom Beef Stew



3/4 Tsp Salt

1/2 Tsp Black Pepper

1 Pound Boneless Beef, Cut Into Small Cubes

1/4 Cup Flour

3 Tsp Olive Oil

1-1/2 Cup Onion, Coarsely Chopped

8 Oz Mushrooms, Sliced

3 Cups Beef Broth

4 Tsp Tomato Paste

1/2 Tsp Thyme

1 Bay Leaf

1 Pound Baby Potatoes, Cut In Quarters

8 Oz Baby Carrots

4 Tsp Parsley


 Place flour, 1/2 tsp salt and 1/4 tsp pepper into a zippered bag. Place meat in bag, close; shake to coat.

Add 2 tsp olice oil to a 6 quart pot over medium high heat. Remove meat from plastic bag and add to pan. Brown meat on each side, about 2 min. remove with a slotted spoon and set aside.

Add remaining oil to pan. Add onions; cook until soft, not brown about 3 minutes. Add mushrooms; sprin=kle with salt and pepper. Cook mushrooms, until soft about 2 minutes. Add broth and whisk in tomato paste. Add bay leaf, thyme; bring to a boil. Add potatoes, carrots and meat. Cover and cook on a simmering boil over medium heat for 15 minutes.

Remove bay leaf before serving with a crusty French bread.
