| cauliflower | | 3 oz butter or margarine |
| 1½ oz flour | | 12 fld oz milk |
| Pinch salt & pepper | | ¼ lb grated cheece |
Method
Bring to boil ½ a saucepan of boiling water. Break the cauliflower into its florets and cook in the boiling water for a few minutes until the florets are soft. Make up using 1½ oz of the butter, ½ the cheese and all the flour, salt & pepper following the Whitesauce recipe. Use ½ the remaining butter grease an ovenproof dish, drain the cauliflower florets place in the dish and cover with the cheese sauce. With the remaining cheese sprinkle on top and dabs (spots) of the remaining butter. Brown under a grill for a few mins. Serve with boiled potatos and broccoli if you wish. |
