medium cabbage1 oz butter or margarine
small onionmashed potato same amount as cabbage


An excellant breakfast dish
This is a useful recipe to use up left over cabbage or mashed potato you may have from the main meal day before.
Method
In a medium to large saucepan with water and bring to the boil. Remove from the cabbage the outer spoilt leaves and the core(the hard centre). Shred the rest of the cabbage and place into the boiling water for several minutes. Chop the onion quite small and fry in a large frying pan using the butter until the onion is soft. Add the cabbage and over a low heat stir for 2 minutes. Fold in the mash potato until evenly mixed with the cabbage. Mould (shape) the mix to form a lage thick pancake and brown for a few minutes turn over and brown the new side for a few minutes.
