NUT ROAST WITH WATERCRESS AND RED PEPPER STUFFING.


INGREDIENTS

Large Onion (finely chopped)

2

Garlic Cloves (chopped)

2 tbsps

Olive Oil

I pint (600 ml)

Passata (sieved tomatoes)

6 fl oz (175 ml)

Red Wine

2 tbsps

Tomato Puree

1 tsp

Caster Sugar

1

Bay Leaf

2 sprigs

Fresh Thyme

 

Seasoning


METHOD

Place the onion, garlic and olive oil in a large pan and cook over a low heat until they are softened but not browned.

Add remaining ingredients and simmer for 15 minutes. Season to taste. Remove the bay leaf and thyme sprigs and serve with the nut loaf.
