QUICK PRAWN CURRY.


INGREDIENTS

1 tbsp

Sunflower Oil

1

Onion (chopped)

1

Garlic Clove (crushed)

2 tsp

Fresh Ginger (chopped)

12 to 1 tsp

Chillies (chopped)

I tin

Chopped Tomatoes

400g

Raw Prawns (peeled)

2 tsp

Garam Masala Spice

3 tbsps

Low-fat Yogurt

I handful

Coriander Leaves (roughly chopped or torn)


METHOD

Heat the oil in a pan, add the onion and fry until softened. Add the garlic, ginger and chilli and fry for a few minutes.

Add the tomatoes with 1 tbsp water and bring to the boil. Simmer for 2 minutes then add the prawns and the garam masala.

Cover and cook for 5-10 minutes to reduce, then stir in the yogurt. Sprinkle with chopped coriander and serve eother with rice, or with warm garlic naan bread.
