Sweet Potato and Apple
Salad with Lime Yogurt Dressing

Large Granny Smith Apple, Unpeeled |

Directions:
Line a baking sheet with
aluminum foil. Cut 1-2 slits in the sweet potatoes to vent. Place the potatoes
on the baking sheet and bake for 20 minutes in a 400ºF oven, until tender.
In a large serving bowl, combine the yogurt,
mayonnaise, lime juice, lime zest, brown sugar, salt and pepper. Coarsely chop
the apple, and add to the dressing, and toss. Add the celery and walnuts and
stir to combine.
When the potatoes are cool enough to handle,
but still warm, peel and cut into bite size pieces. Add the still warm potatoes
to the serving bowl with the yogurt dressing and toss to coat.
