Sweet Potato Casserole

Medium sweet potatoes or yams

Egg, beaten

Heavy cream

Brown sugar

Nutmeg

Rum extract (optional)

Orange peel, finely grated

Butter, melted

Directions:

Preheat oven to 500º, butter a 1-1/2 quart casserole.

Peel madh and whip sweet potatoes until smooth. Add beaten egg, heavy cream, brown sugar, salt, m=nutmeg, and if using the rum extract. Beat until light and fluffy. Put into prepared casserole, sprinkle evenly with grated orange peel. Drizzle with melted butter. Place in oven and cook for 30 min or until lightly browned.
