Spinach and Ricotta Dumplings

Ingredients:

Package frozen spinach

Ricotta cheese

Salt

Egg yolks

Grated Parmesan cheese

Flour

Directions:

Cook spinach and drain well. Combine spinach, ricotta, salt, egg yolks, and 3 tablespoons of

parmesan cheese. Drop mixture from a spoon into flour and shape into balls the size of walnuts. Cook in boiling water for about 5 minutes. Remove; drain on towel, Serve with melted butter and sprinkled parsley. (or can be dropped in chicken broth and served as a soup)
