Potato Pie

Small Curd Cottage Cheese

Shredded Monterey Jack Cheese

Frozen, Shredded, Potatoes, Thawed

Directions:

Spray a 9x15” casserole dish with cooking spray. Preheat oven to 350ºF.

In a medium bowl combine flour, baking powder, and salt.

In a large bowl combine eggs, milk, butter, and oil. Blend in the flour mixture. Add the cottage cheese, Colby and Monterey Jack cheese and ¾ of the potatoes. Mix well. Pour into prepared casserole dish and spread the rest of the potatoes over the top. Bake for 35-45 minutes or until potatoes are cooked and the top is golden brown.
