Mushroom Pie

Ingredients:

9” pastry shell

Green onion, chopped

Swiss cheese, shredded

Directions:

Preheat oven to 450”. Prick bottom fo crust with a fork, bake 5 min. Cool completely.

Reduce heat to 375º Melt butter in a large skillet over medium heat. Add green onions and garlic; cook until onions are tender. Add mushrooms; cook until all liquid has evaporated. Remove from heat. Sprinkle half of the cheese over crust. Spoon half of the mushroom mixture over cheese. Repeat with remaining cheese and mushroom mixture.

In a medium bowl, whisk eggs, whipping cream, basil, thyme, salt and pepper. Pour egg mixture over cheese-mushroom mixtures in pie crust. Bake 40-45 min or until a knife inserted in center comes out clean. Let stand 10 min before serving. Serve warm.
