Directions: Preheat oven to 400º. Lightly Grease a baking
sheet. Mix together the feta cheese and mascarpone.
Mix well. Taste the mixture, and season as needed. Heat the oil in a skillet,
and add the mushrooms and onions. Cook until golden brown. Remove from the
heat, and season with salt and pepper, and mix with the fresh parsley. **Note: this can be made into a regular pie,
place one pastry shell in pie plate. Spread the cheese mixture over the dough,
Spoon the mushroom mixture onto the cheese mixture, Cover with remaining pastry
dough and crimp edges to seal. Bake for 30 min or until pie is golden.
