Mushroom And Feta Cheese Tart

Ingredients:

Pastry dough for 1 pie

Feta Cheese

Clove garlic, minced

Mushrooms, thinly sliced

Onion, finely chopped

Fresh parsley, chopped

 

 

Salt and pepper

Directions:

Preheat oven to 400º. Lightly Grease a baking sheet.

Mix together the feta cheese and mascarpone. Mix well. Taste the mixture, and season as needed. Heat the oil in a skillet, and add the mushrooms and onions. Cook until golden brown. Remove from the heat, and season with salt and pepper, and mix with the fresh parsley.

On a lightly floured surface, roll out one of the pastry doughs to a 9” circle. Transfer the dough onto a prepared baking sheet. Spread ½ of the cheese mixture over the dough, leaving about 2-1/2” border all around. Spoon 1/2 of mushroom mixture onto the cheese mixture. Fold the edges of the pastry over to cover. Prepare the other tart the same way. Bake for about 30 minutes, or until the pie is golden brown. Serve warm, or at room temperature.

**Note: this can be made into a regular pie, place one pastry shell in pie plate. Spread the cheese mixture over the dough, Spoon the mushroom mixture onto the cheese mixture, Cover with remaining pastry dough and crimp edges to seal. Bake for 30 min or until pie is golden.
