Sour Cream Latkes

Potatoes

Eggs

Small onion, grated

Cup

Sour cream

½

Cup

All-purpose flour, sifted

¼

Teaspoon

Baking powder

¼

Teaspoon

White pepper

 

 

Vegetable oil for frying

Directions:

Peel potatoes and grate coarsely into a large bowl of water, Drain and rinse in cold running water. Squeeze firmly to remove all water.

Beat Eggs in a large bowl until frothy. Add potatoes, onion, sour cream, flour, salt and pepper, stir.

Heat about ¼” depth of oil in a large skillet over medium heat. Drop potato mixture by tablespoons into hot oil, flatten with pancake turner to make an even thickness. Brown on side 4-5 minutes, turn and brown the other side. Adding oil as needed to fry all. Drain on Paper toweling. Serve warm with Sour cream, caviar, apple or cranapple sauce.
