Hot Potato Salad

Ingredients:

Large Potatoes

Bacon

Cup

Onions, Chopped (2 Medium)

Water

Cornstarch

Cup

Vinegar

Sugar

Salt

Pepper

Cup

Pickle Relish

Cup

Chopped Pimento

Directions:

Boil potatoes, then refrigerate about 4 hours. Peel and slice. Chop bacon and onion fine and brown in skillet until bacon is crisp. Do not drain. Add cornstarch mixed with water to bacon mixture, stirring until mixture thickens. Add vinegar, sugar, salt, pepper, pickle relish and pimentos to skillet, simmer for several minutes. Stir in sliced potatoes, and simmer until they are heated through.
