German Potato Salad

Ingredients:

Bacon slices

Onion, chopped (2 medium)

Cider vinegar

Potatoes (6 cups sliced)

Directions:

Peel, slice and cook potatoes in salted water until tender, drain and set aside.

Fry bacon in large skillet until crisp; remove and drain grease, reserving 3 tablespoons of drippings. Cook onion in bacon drippings until tender. Stir in flour slowly; blend well. Add vinegar andwater; cook, stirring until bubbly and thick. Stir in sugar, salt and pepper; simmer 10 minutes. Crumble bacon. Carefully stir in bacon and potatoes into hot mixture. Heat through, stirring lightly to coat potato slices. Serve warm.
