Deep Fried Carrot Balls

Ingredients:

Carrots, peeled and sliced

Ground ginger

Green onions, finely chopped

Vegetable oil

Eggs, beaten

 

 

Salt and pepper to taste

All-purpose flour

Oil for frying

Directions:

Cook the carrots in boiling salted water for 15 minutes or until tender. Drain and mash. Add the ginger, onions, oil, and beaten eggs to carrots. Season to taste with salt and pepper.

In a small bowl, mix the flour and sesame seeds. Shape the carrot mixture into walnut sized balls. Roll them in the flour-sesame mixture. Chill in refrigerator for ½ hour. Heat 1-1/2” to 2” of oil in skillet; add the carrot balls and cook in batches for 2-3 minutes or until golden brown. Remove the balls and drain on paper towels, return to oil and cook another 30 seconds.
