Applesauce Sweet
Potato Bake
Ingredients:

1 pound sweet potatoes or yams (about 3 medium) 1 cup applesauce 1/3 cup packed brown sugar 1/4 cup chopped walnuts or pecans 1/2 tsp ground cinnamon 2 Tbsp butter |
Directions:
Place
sweet potatoes in a 3-quart saucepan; add enough water to cover. Heat to
boiling; reduce heat. Cover and simmer 30-35 minutes or until tender; drain.
Remove skins; cut each sweet potato lengthwise in half.
Heat oven to 375 degrees F. Place sweet potatoes;
cut side up, in ungreased 2-quart casserole or square baking dish, 8x8x2.
Spread applesauce over sweet potatoes. Mix brown sugar, nuts and cinnamon;
sprinkle over applesauce. Dot with butter. Cover and bake for 30 minutes or
until browned.
