Vegetable Beef Soup

Ingredients:

Stew Meat or Oxtails

Can Chopped Tomatoes

Potatoes, Peeled, Cubes

½

cup

Celery, Chopped

½

Cup

Carrots, Sliced

½

Cup

Onion, Chopped

Rice Or Barley

Tsp

Pepper

Directions:

Cover meat with water; add salt and heat to boiling. Reduce heat; cover and simmer for 2 hours. Let stock cool slightly, skim fat from top. Add remaining ingredients. Heat to boiling. Cover and simmer 20-25 minutes or until potatoes and carrots are tender.
