Wonton Coated Stuffed Shrimp

Won ton wrappers

Large raw shrimp

Green onions, finely chopped

Pkg cream cheese

Egg white

Salt and pepper to taste

Egg, lightly beaten

 

 

Oil for frying

Directions:

Using a sharp knife, thinly slice and then shred won ton wrappers. Set aside. Peel and devein 12 of the large shrimp, leaving the tail intact. Cut a shallow incision along the inside of the shrimp for filling.

Peel, devein and remove tail shell from the remaining 4 shrimp, add to a food processor along with cream cheese and onions. Place the mixture in a small bowl and add the egg white, 3 teaspoons of cornstarch, salt and pepper and mix together well.

Spread about 1 tablespoon of mixture into each of the shrimp, pressing with your fingers to fill as much as possible. With wet hands, press any remaining mixture around each shrimp. Roll the shrimp in remaining cornstarch, lightly dip in beaten egg and sprinkle with the shredded won tons.

Heat 1-1/2 to 2” oil in a skillet. Add the shrimp in batches, and cook for 4 minutes or until golden brown. Drain on paper towels to drain.
