Poached Salmon with Mustard
Cream Sauce
Ingredients:

Dry White Wine |

Dry Vermouth |

Shallots, Chopped |

Dijon Mustard |

Heavy Cream |

Chives, Chopped (Optional) |
Directions:
Season the salmon fillets
with salt and pepper to taste. In a large skillet combine the white wine,
vermouth, shallots, mustard and cream, and bring to a simmer. Add the salmon fillets,
cover and cook for 10-15 minutes or until salmon changes color and becomes
flaky. Remove the fillets. Reduce the sauce and add chives, salt and pepper to
taste.
Serve fillets with cream sauce spooned over
the top.
