Poached Salmon with Mustard Cream Sauce

Ingredients:

Salmon Fillets

¾

Cup

Dry White Wine

Tbl

Dry Vermouth

Tsp

Shallots, Chopped

1

Tbl

Dijon Mustard

½

Cup

Heavy Cream

 

 

Chives, Chopped (Optional)

Directions:

Season the salmon fillets with salt and pepper to taste. In a large skillet combine the white wine, vermouth, shallots, mustard and cream, and bring to a simmer. Add the salmon fillets, cover and cook for 10-15 minutes or until salmon changes color and becomes flaky. Remove the fillets. Reduce the sauce and add chives, salt and pepper to taste.

Serve fillets with cream sauce spooned over the top.
