Crab Meat Casserole Ingredients:
Directions: Preheat oven to 350ºF.
Butter a 2 quart casserole or baking dish. Pick over crab meat to remove cartilage. Melt
butter in top of double boiler. Separate hardboiled eggs and mash yolks in melted
butter. Add flour, vinegar and seasonings and stir well. Chop egg whites, and
add, together with beaten yolks, and grated oinion. Pour in cream and cook
until mixture is very thick. Add crab meat. Remove from heat and fold in
well-beaten egg whites. In a small bowl, mix the breadcrumbs and 2
tablespoons melted butter. Fill prepared pan with crab mixture and cover with
buttered crumbs. Bake for 20-25 minutes or until brown.
