Coconut Tempura Shrimp

Ingredients:

Vegetable oil

Flour

Cornstarch

Large egg, beaten

Grated coconut

Ice cold soda water

Large shrimp, peeled, deveined, tail left on

Bay seasoning

Directions:

Preheat oil in deep fryer. In a medium bowl, combine flour, cornstarch, egg, coconut and soda water. Mix well to make a smooth batter. Season to taste with salt and pepper. Sprinkle shrimp with bay seasoning. Dip shrimp in batter, shaking off excess, and place in hot oil to fry in batches until golden, about 2 min per side. Drain on paper towels.
