Almost English Fryed Fish

 

Ingredients:

3 Pounds Cod Fillets

2 Cups All-Purpose Flour

3 Cups Pancake Mix

3 Cups Club Soda

1 Tablespoon Onion Powder

1 Tablespoon Seasoned Salt

 

1 Pint Canola Or Vegetable Oil For Frying

Directions:

Place flour in a medium sized plastic bag. Moisten the fish with water, and drop into plastic bag with flour, shaking to coat evenly, shake off any excess flour. Set on a plate or on wax paper to rest, about 5 minutes.

In a medium bowl, whip the pancake mix with the club soda until combined, beat in onion powder and seasoned salt (batter should be consistency of buttermilk).

Heat the oil in a heavy saucepan or deep fryer to 425° or a sprinkle of water sizzles when added. Dip floured fillets into batter, holding a second or two over bowl to remove excess and drop into oil. Brown about 4 minutes per side. Set on paper towels to remove excess oil before serving.
