Sweet Potato and Apple Bake

 

Ingredients:

2 large sweet potatoes, peeled, halved and cut into thick slices 1 lb Turkey sausages 1 tbsp vegetable oil 2 cooking apples, peeled, quartered, cored and cut into thin slices 8 oz package Frozen Sweet corn  ½ tsp ground cinnamon Pinch ground nutmeg

Directions:

 Bring a pan of water to the boil and cook the sweet potato slices for 4-5 minutes until just tender. Drain in a colander under cold running water and set aside.

preheat oven to 350 degree F

Heat a non-stick frying pan and cook the  sausages in the oil until well browned, chopping up as it browns into chunks, stirring regularly.

Toss the cooked sweet potatoes, sausages, apples, sweet corn, cinnamon and nutmeg in a large, ovenproof dish. Cover and bake in the centre of the oven for about 35 minutes or until the apples are tender. Serve hot.
