Mushroom Quiche
Ingredients:

1/2 cup sliced onion 8 oz can sliced mushrooms 2 Tbsp olive oil 8 oz. Cream Cheese, softened 3 eggs 1/2 cup heavy cream 1/2 cup milk Salt and freshly ground pepper, to taste 1 baked deep dish 9” pastry shell |
Directions:
Preheat oven to 350°F.
Heat oil in a large nonstick skillet over medium
high heat. Add onions, and cook, stirring, until translucent but not brown,
about 1 minute. Add mushrooms, and season with salt and pepper. Cook, stirring
frequently, until are golden brown, 5 minutes.
Place pastry shell on a baking sheet to catch any run-off there might be.
Spread mushroom mixture onto bottom of pastry
shell.
In a medium bowl, whisk together milk, cream,
and eggs until
blended, add
cream cheese ad whisk until smooth. Pour over mushroom mixture. Transfer to
oven and bake 30-40 minutes or until knife inserted in center comes out clean.
Let stand 10 minutes before serving.
**8 ounces Swiss cheese, grated (2 cups), may
be substituted for cream cheese – or 1/2 cup may be added in for extra cheese
flavor.
