Ciabatta Pizza
Ingredients:

2 Red Onions, Each Cut Into 6 Wedges 1 Tsp Thyme Salt And Freshly Ground Black Pepper Olive Oil, For Drizzling 1 Baked Ciabatta Bread 1 Medium-Sized Jar Bought Tomato Pasta Sauce 10-˝Oz Jar Marinated Artichokes 14 Oz Can Artichoke Halves, Drained And Halved 4-˝ Oz Blue Cheese, Such As Stilton Or Gorgonzola,
Crumbled 1 Tsp Basil ˝ Cup Grated Parmesan Cheese |
Directions:
Preheat
the oven to 400°F.
Place the onion wedges and thyme in a small
roasting tray. Season with salt and pepper to taste, and drizzle with olive
oil. Place in the oven for 20 minutes until softened and beginning to turn
golden, turning halfway through.
Cut the Ciabatta in half lengthways and place
on a baking sheet, cut-side down (If the top half of the loaf wobbles around,
slice some crust off the base so it sits flat). Spread thickly with the tomato
sauce. Divide the roasted onions,
artichokes, blue cheese, basil and the Parmesan cheese evenly between Ciabatta
halves.
Bake in the oven for 15 minutes or until the
cheese is golden.
Serve cut into slices.
