7 Minute Icing
Ingredients:

Directions:
Combine the sugar, water,
egg whites, corn syrup and a pinch of salt in the top of a double boiler over
hot water. Beating constantly, cook the mixture for seven minutes, until it
forms soft peaks. Remove the mixture from the heat and stir in the vanilla
extract. Beat the icing for 3-5 minutes longer, until it forms stiff peaks and
is tepid.
**For fruit-flavored icing, substitute
strained fresh fruit juice for part or all of the eater, according to taste.
TO flavor the icing: add strong black coffee,
praline powder, brandy or liqueur to taste for the vanilla extract.
TO color the icing: Add food coloring by the
drop until desired color is achieved.
