These are some recipes that Stephen and I shared and enjoyed. If you enjoy them also please stop by my guestbook and let me know. Stephen truly enjoyed cooking and always appreciated the hearing about new people enjoying the recipes we shared.
Stephen's Mediteranean Chicken
Stephen's One Skillet Stroganoff
STEPHEN'S ONE SKILLET STROGANOFF
1 lb Ground beef
1 can Beef broth
1 can Mushroom or golden mushroom soup
8 oz Sour cream
3-5 cups Egg noodles, large
Veggies of your choice
Now I add onion, bell pepper, garlic and soy when I brown the meat. (Kikkoman's the best soy). Drain and back to
the heat. Add broth & soup to a low boil. This will help to blend the sour cream. After mixing
completely still on a simmer add the noodles to the mixture. When the noodles have cooked remove from heat and
serve. Note: If you replace the egg noodles from the mix & substitute spaghetti or similar pasta, this is great to serve
to children who eat with their fingers this is a great Kodak moment, this stuff sticks great to their face.
Easy and Moist Corn Muffins
1 box Jiffy Corn Muffin Mix
1 egg
2 tablespoons sour cream
2 tablespoons milk
Preheat oven to 400 degrees. Grease muffin pans or use paper baking cups. Blend ingredients. Let batter rest five minuted before filling cups. Bake for 15 to 20 minutes or until golden brown.
Sour Cream Coffeecake
Blend:
1/2 cup shortening (margarine)
1 cup sugar
2 eggs
Sift together and add:
2 cops flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
Fold in:
1 cup sour cream
1 teaspoon vamilla
Topping:
1/2 cup chopped walnuts nuts (optional)
1/4 cup sugar
1 teaspoon cinnamon
Use ungreased baking pan or two quart casserole dish. Preheat oven to 350 degrees. Put in half the batter. Add 1/2 of topping. Add rest of batter and then rest of topping. Bake for 45 minutes or until toothpick or fork comes out clean.
Banana Nut Bread
Blend:
1/3 cup shortening (margarine)
2/3 cup sugar
1/4 cup sour cream
Beat in:
1 egg
1-1 1/2 mshed banana
Sift together and add in three parts:
1 1/2 cups flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon cinnamon
Fold in:
1/4-1/2 cup chopped walnuts
Preheat oven to 350 degrees. Grease 8x4x2 loaf pan. Bake 45 minutes to 1 hour until toothpick comes out clean.
