Chicken Mango Salad
Spring Salad mix (or whatever you prefer)
1-1/2 Cups Peeled Mangos, diced
2 Cups grilled chicken, previously marinated in Lowery's Mesquite marinade
Dressing:
1 tsp Sugar
2 Tbsp olive oil
2 Tbsp white wine vinegar
Whisk dressing very well right before you put on salad.
NOTES: Now for this salad, I like to decrease the olive oil down to one tablespoon or less, and increase the white wine vinegar.  I also like to add some lime juice, I've never measured this, but I would say about a tablespoon and a half.
